Because Posts are Few and Far Between Lately

Let’s be random. Ok, maybe I’ll be the only random one because my cute friend over here told me to.

My computer is stuck on over type. I have no idea how this happened, nor how to fix it. I don’t want to tell Hub because I’m too proud.

I’m obsessed with my dog. Obsessed. It’s really unhealthy. and yes, he does sleep right there in my closet. He’s always had this obsession of sleeping under all my clothes.

I hate making decisions in fear of offending someone, but this makes me really easy going.

95% of the time I talk to people I’m super awkward. This makes my job 100% difficult because my job is to talk to people.

Hub knows me better than I know myself. Like when I asked him if I could DJ in the car his response was “Only if it’s not Beyonce on repeat”. How did he know? It haven’t occurred to me yet, but that’s exactly what I was headed for.

I want to finish my degree, but I don’t know if I should do fashion, and never use it, or Interior Design, and rarely use it, or go the opposite direction and go to hair school.

I get the travel bug about once a month. I love going places. Every time the travel bug comes to town, so does the shopping bug. Double wammy.

Most everything that comes out of my mouth starts with “So I was reading this blog the other day….”

I get the giggly wigglies every time Hub texts or calls me, we’ve been married over a year.

Last night, while eating hash browns, I decided I hate the smell of ketchup, but I love the taste.

I love driving around and looking at houses. Hub hates it.

I love looking at the inside of houses even more. So I think EVERYONE should put pictures of their houses up. I’d love it.

My friends are the greatest. Just today I got an envelope full of pictures from my best friend who just moved to Florida. (Come baaaaack)

I love when people change their relationship status on FB. It’s so fascinating to me. and I love looking at the pictures of peoples weddings and engagements. Please, everyone just wants to see the ring and the dress. Please put up pictures that make both very easy to see.

I love crafting, making things, being artsy and such. But I never make anything that actually works. Let’s not bring up the dinner I set on fire, or the magnets that are too heavy to stick to my magnet board.

IMG_5443

Please notice the magnets sitting on the table.

I would love to have a successful blog, but I’m not very interesting. I’m pretty dang awkward, and my life isn’t that exciting.

I’m OCD when it comes to cleaning and it bothers me. I want to be ok with messes, and couches with messed up pillows, so sometimes I force myself to not wipe off the counter after I’ve dropped crumbs on it. It makes me cringe… and it makes me cringe even more admitting it. I sure hope my mom doesn’t read that.

Ohhhhhhhhhh Mexico

I guess it’s time to get back into this whole blogging business. Whenever I take a vacation I come home in need of another. Literally, my suitcase is still packed on the floor by the door. It’s just begging me to go back.

We had such a magical time in Mexico, and guess what? No one was kidnapped, and the drug cartel didn’t get us. Everyone always says to me that Mexico is so dangerous, and there are so many bad things going on down there. I have so many opinions on the topic and it gets me so frustrated, so I will just move right along.

We left Friday morningish and arrived to our little house in Los Conches around 4ish? I think? Once we crossed the boarder I lost all sense to time. To sum up the weekend in a really long sentence, and a really long roll of pictures: we ate and ate and ate, and when we weren’t hungry, we ate some midnight tacos, we sat on the beach, visited Chino, got ice cream, went to the fish market, Chief may have marked some sombreros as his own, drove around town, ate at good ol’ Pollo Lucas, went to Arruro Bodega just because, ate tres leche cake (yum), ate a few more tacos, passed out candy to the kids who wanted to sell us candy, went to church in Spanish, played some mean card games resulting in Shelby winning 14 pieces of candy and much much more…

WARNING! PICTURE OVERLOAD!

Hola

Goodbye America! See you Monday!

I will be spending my weekend on the majestic beaches of Mexico with Hub and these people.

I'm going to eat tacos until I.... well I'll leave that part out.

I'm going to have a Coca Light in one hand, and a churro in the other allllllll weekend long.

And there's nothin' you can do to stop me.

Goodbye diet, Hello additional 10lbs and my bikini!

This is from our very first trip to Mexico together about 2 weeks after we met.

I'm so glad it wasn't our last

Love you Hub!

Fire Cheesesteaks

A while ago, when I started blogging about how bad I suck at life, Hub had a concern.

Hub: “I think if you take pictures of everything you do, every step of the way, things will go according to plan and there will be no disaster”

I am here to report that is not the case. In fact, I may have just encountered the worst disaster yet.

While browsing my favorite recipe website today I came across a few that I would love to try. Everything that I have made from Favorite Family Recipe has been super amazing, and many have become “repeat recipes” at our house.

I decided that I was going to try to make Easy Philly Cheesesteaks. I just now noticed that the word “easy” was in the title. People, don’t be confused, they may be simple, but I wouldn’t go so far as to call them EASY.

I drove my booty to the store, got all my goods, and came home super excited to make Hub a sandwich and potato wedges (also amazing). So here it goes, step by step to ensure that I do not mess it up.

First I made the potato wedges. Yum Yum Yum!!

These are easy. I think the pictures explain it all. Then pop them in the oven at 450 for 35ish minutes, or until golden brown and soft all the way through. (Note: make sure that you set the oven at 450 NOT 350… not like I know from experience….)

Then carry on with your main entrée.

*Please excuse the absence of the cream cheese, but it is VERY important!!!*

Combine your can on beef broth and a package of your onion soup mix and bring to a boil, then add your roast beef, and simmer for about 10 minutes (or longer if you are me and need to figure out what the crap you are doing)

IMG_5431 (2)

*Pre beef, obvi.*

Sautee your onion and pepper in a large skillet. When the roast beef is done simmering, add it to your onions and peppers along with 4 oz. of cream cheese. (or more if you are me and A. love cream cheese, B. have no idea how much 4 oz. really is).

IMG_5432 (2)IMG_5434 (2)IMG_5435 (2)

*That really was a ton of cream cheese. A TON.*

Spread the remaining cream cheese on your hoagie’s and add a mucho grande amount of your beef mix. Place your provolone cheese on top of that and pop those bad boys in the oven on broil until your cheese is super gooey and your buns are just barely broiled.

I know this is the part that you are waiting for, forget the directions, they aren’t very good anyway. You are so excited to see the finished product and be so jealous that we had this amazing dinner… but what I’m about to show you is far from perfection.

This is real. You think that its just really really burnt? No no no. I’ll tell you what happened. I quickly set the place mats down (ok maybe we are using dish towels at the moment because our place mats had bugs living on them (groooooooooossssssssss), grabbed two water bottles and put them on the table, turned around to bend down and open the oven, and then I saw the tragedy. My delicious easy cheese streaks were engulfed in flames. I stood up really quick because I didn’t believe my eyes, bent back down just to double check to make sure my worst night mare wasn’t coming true, and it was. Is it terrible my first thought was “where is my camera?! No one is going to believe this!” and then came reality, “OH ****!!!! THE WHOLE TOP OF THE OVEN IS ON FIRE!!! I HOPE IT’S JUST MY HOAGIES AND NOT THE WHOLE FLIPPIN GAS LINE”! Literally, the top of my oven looked like it was all on fire. The very center of the oven was in flames, and those flames were connected to my yummy dinner. I grabbed my oven mitt’s and ripped that cookie sheet out of the oven and blew out the flames faster than you could say “Only you could light dinner on fire”.

I was so so so stinkin’ excited to eat this meal, I can’t even describe it to you. I went outside to tell husband of our loss (he was cleaning the pool, surprised?) and then stumbled my way back down the hall into my smoke filled kitchen. Luckily I bought more hoagies, and the yummy beef hadn’t been scalded to death so I popped some new buns on a new cookies sheet and threw them in the oven that I had turned off. I left them in there long enough to brown and I kept my eyes glued to the stupid thing. I moved the gooey goodness from the charcoal onto the lightly toasted hoagies and dinner was back on, and you know what, IT WAS AMAZING.

Next time (if I’m brave enough to ever use the oven again) I might find out how much 4 oz. of cream cheese really is, but other than that, no changes whatsoever. Oh, except of lighting everything on fire. I’ll leave that one out… hopefully.

Not even documenting my semi-step-by-step dinner can save me from myself.

Yours truly,

                       -The Natural Disaster

PS. Please don’t tell me I’m the only one who has encountered a fire in the kitchen. Please?
